If patience is a virtue, then Acetaia del Cristo is overflowing with goodness. It takes 25 years to create Acetaia’s Extra-Old Balsamic Vinegar of Modena, and 12 years to make its Traditional Balsamic Vinegar of Modena. The organic grapes are hand-picked, pressed, and then aged in casks. As many as 2,000 casks fill Acetaia del Cristo’s attics at any given time, and they are topped off with careful attention to ensure proper aging techniques are maintained. Various types of wooden barrels are used to create the distinct aromas and flavour that is unique to Acetaia del Cristo. Acetaia’s quality stems from their commitment to tradition: for three generations they have continued to produce balsamic vinegar from 100 per cent natural ingredients, creating a taste worth waiting for.
